Maque Choux Lettuce Cups

Ingredients
1 Tbs unsalted butter
1/4 lb ham, small diced
1 1/2 cups frozen corn, thawed
1/2 cup red onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup bell pepper, finely chopped
1/2 cup green onion, finely chopped
4 cloves garlic, minced
5 okra, trimmed and thinly sliced
1/2 cup tomatoes, seeded and chopped
1 tsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
1 head butter lettuce
Directions
- In a large skillet over medium heat, melt the butter.
- Add the ham. Sauté for 2 to 3 minutes.
- Add corn, red onions, celery, bell peppers, green onions and garlic.
- Reduce heat to low. Cook for 4 to 5 minutes until vegetables are soft.
- Remove from the heat. Add the okra, tomatoes, Cajun seasoning, salt and pepper.
- Set aside to cool.
- Remove the leaves from the head of lettuce.
- Add 1/3 cup of the Maque Choux to each lettuce leaf.
- Serve immediately.
